Healthy Chocolate Peanut Butter Banana Oatmeal Breakfast Bars

For the Bars

  • 2 cup rolled oats
  • 1/2 cup flour of choice almond works well
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup coconut oil
  • 4 eggs
  • 1/3 cup maple syrup
  • 1/2 cup peanut butter natural
  • 1 tsp vanilla
  • 1/2 cup semi-sweet chocolate chips
  • 1 banana sliced

For Topping

  • 1/4 cup semi-sweet chocolate chips
  • 1 Tbsp coconut oil


  • Preheat oven to 350 F and line a 9x13" pan with parchment paper
  • In a medium bowl, mix together the dry ingredients, from oats to salt. Set aside
  • Melt the coconut oil by putting it in the microwave for 10-15 seconds and let cool slightly
  • Beat in the eggs
  • Mix in the maple syrup, peanut butter, and vanilla
  • Stir until combined
  • Pour the wet ingredients into the dry and mix until just combined
  • Fold in the chocolate chips
  • Spread the mixture into the pan
  • Add sliced banana on top
  • Bake for 30-35 minutes or until golden brown
  • Let cool. Meanwhile, melt the remaining chocolate chips and coconut oil together and pour over bars. Spread with a spatula or back of a spoon
  • Place in the fridge for the chocolate to harden before cutting into bars
  • Store in an airtight container in the fridge for up to 5 days
