Protein Pancake Mix Recipe
A high protein, high fiber, healthy and delicious pancake mix recipe to make your pancake making mornings quick and easy. Customize any way you like!

- 1 cup vanilla protein powder I used whey isolate but you can use vegan if desired
- 1/2 cup ground flax seed or buy golden flax seed and grind in the Nutribullet
- 4 Tablespoons of baking powder
To Make Pancakes Add:
- 1/2 cup dry pancake mix
- 1/4 cup egg whites or 1 whole egg, or vegan egg replacement
- 1/4 cup milk of choice almond, coconut, dairy, kefir
- additional add-ins, as desired
- 1 tbsp oil for pan coconut, grapeseed, etc.
For This Beautiful Blueberry Walnut Version:
- 1/3 cup wild blueberries
- 1/2 tsp ground cinnamon
- 1/4 cup walnuts, chopped
To Make Pancakes:
Mix liquid ingredients with 1/2 cup of dry pancake mix
Add in any additional ingredients to customize (such as blueberries, cinnamon, walnuts)
Heat skillet on medium-high and add some oil to pan
Drop about a 1/4 cup of mix into pan and cook until bubbles show through. Flip and cook on other side until golden brown
