These healthy mocha no bake cookies are kicked up with coffee, the superest of foods, along with nutritional powerhouses: hemp, pumpkin seeds, cocoa, and coconut. Oh yeah, and just one contains 21% of your daily iron!
Healthy mocha no bake cookies take only 10 minutes of hands on work.

All you need to do is melt a few ingredients together and drop em’. Wait 30 minutes, and you’ve got these gorgeous mocha no bake cookies that will last you a whole week!
First, melt the following:
- 1 cup of semi-sweet chocolate chips
- 3 tbsp of coconut oil
- 1/3 cup strong brewed coffee or espresso, at room temp
- 1/4 cup honey or agave
- 1 cup of natural peanut butter, or whatever nut butter you choose
After these ingredients are combined and smooth, mix in:
- 1/4 cup pumpkin seeds
- 1/4 cup chopped cashews or walnuts
- 1/4 cup hemp hearts
- 2 tbsp cocoa powder
- 1/2 cup shredded coconut
- 1 cup rolled oats


After everything is thoroughly mixed, drop them by the large spoonful onto a parchment lined baking sheet.
Then place the baking sheet in the fridge to firm up for 20 to 30 minutes.
Mocha no bake cookies will keep in the fridge in an airtight container for one week.

Ingredients
- 1 cup semi-sweet chocolate chips

- 1/4 cup chopped cashews or walnuts

- 1/2 cup shredded coconut unsweetened
- 1 cup rolled oats
Instructions
- In a saucepan, stir together the chocolate chips, coconut oil, coffee, and honey. Heat until fully melted and incorporated. Remove from heat.
- Stir in nuts, cocoa powder, coconut, and oats until well combined.
- On a parchment lined baking sheet, use a large spoon or cookie scoop to drop 12-16 cookies.
- Place baking sheet in the refrigerator for 20-30 minutes until set. Remove and eat at least one before storing in a container.
- These cookies will keep in the fridge in an airtight container for one week.
