



Out of pure protein pancake frustration, I created this perfect diy protein pancake mix recipe.
I was sick of protein pancakes that stuck to the pan and tasted, well, like protein powder.
After much trial and error (I’ve been eating protein pancakes for years), I realized that there needed to be certain elements present for me to enjoy protein pancakes.
They had to:
- Taste like actual pancakes
- Be moist on the inside and crispy on the outside
- Flip without sticking to the pan like most protein pancakes
- Be delicious! Obviously 😉

How to Make Protein Pancake Mix

For this diy pancake mix recipe, I wanted it to be like a complete meal in terms of macros. Just add fruit and maybe some yogurt and go.
This recipe is also gluten free (check your brand of oats) for anyone for whom that is a concern. To make it vegan, use a plant based protein powder in the mix and egg replacer when making the pancakes.
Start with your oats. You’ll need 2 cups of oat flour, store bought or ground at home.
I always blend mine myself because it is economical and easy.
Just add about 1 cup of oats at a time to your blender or Nutribullet (this thing works wonders for making oat flour fine and powdery in seconds with the dry blade).
By the way, I got these absolutely HUGE mason jar storage jars at Costco. The pictures may look like I’m pouring into tiny mason jars, but just look at the Nutribullet for scale!

For this recipe, I wanted to make a bulk amount of pancake mix to have on hand for easy pancake making mornings 🌞
You will need:
- 4 cups of oat flour
- 1 cup vanilla protein powder (I used whey isolate but you can use vegan if desired)
- 1/2 cup ground flax seed (or buy golden flax seed and grind in the Nutribullet)
- 4 Tablespoons of baking powder
If you only have unsweetened, plain protein powder, you will need 1/2 cup of sweetener of choice.

Mix everything in a big jar and you are ready to go!

How to Use Your DIY Protein Pancake Mix Recipe
To make your pancakes from the dry protein pancake mix, use the following ratios for one generous serving (double for 2-3 servings).
- 1/2 cup dry protein pancake mix
- 1/4 cup of milk of choice (almond, dairy, coconut, or kefir*)
- 1/4 cup liquid egg whites or one whole egg or use Vegan Egg or Bob’s Red Mill Egg Replacer
There are so many great options for add-ins in your pancake mix recipe.
When you go to make your pancakes, add in spices, nuts, fruit, seeds and more!
For these pictures, I used wild blueberries, walnuts, and cinnamon.
They were SO good!
*I love to use kefir when I make these pancakes because it creates an effervescent effect that makes the pancakes even lighter and fluffier. Check out more on kefir including how to make it plus this Dirty Chai Latte recipe with kefir.
You can also use this DIY protein pancake mix to make healthy sheet pan protein pancakes.

Protein Pancake Mix Recipe
Ingredients
- 4 cups of oat flour
- 1 cup vanilla protein powder I used whey isolate but you can use vegan if desired
- 1/2 cup ground flax seed or buy golden flax seed and grind in the Nutribullet
- 4 Tablespoons of baking powder
To Make Pancakes Add:
- 1/2 cup dry pancake mix
- 1/4 cup egg whites or 1 whole egg, or vegan egg replacement
- 1/4 cup milk of choice almond, coconut, dairy, kefir
- additional add-ins, as desired
- 1 tbsp oil for pan coconut, grapeseed, etc.
For This Beautiful Blueberry Walnut Version:
- 1/3 cup wild blueberries
- 1/2 tsp ground cinnamon
- 1/4 cup walnuts, chopped
Instructions
- Mix all ingredients in a large, airtight jar and store
To Make Pancakes:
- Mix liquid ingredients with 1/2 cup of dry pancake mix
- Add in any additional ingredients to customize (such as blueberries, cinnamon, walnuts)
- Heat skillet on medium-high and add some oil to pan
- Drop about a 1/4 cup of mix into pan and cook until bubbles show through. Flip and cook on other side until golden brown
