

When I was a little kid, my mom would often make me french toast for breakfast. She has a huge sweet tooth and would whip up my french toast with cinnamon, vanilla, and icing sugar.
She would bring it to me swirled with maple syrup, and even more icing sugar sprinkled on top. It was a sticky sweet delicious treat.
When I was a teenager, my boyfriend at the time had a large family that loved making big breakfasts on the weekend. His dad was often in charge of this meal and would make french toast in order to stretch out the eggs so everyone could get a hearty meal.
To my great surprise, he would fry pieces of bread soaked in eggs, milk, salt and pepper in bacon grease! The preferred topping for this savory version was Cheese Whiz. It was the polar opposite to my mother’s sweet version.
I tend to enjoy more savory foods than sweet, however, as an adult now, I make my french toast on the sweeter side, but not so sugary as my mother’s.
French toast is not typically a well balanced meal. It is mostly carbs with a bit of protein from the eggs. I prefer to try and eat my meals with balanced macronutrients in order to feel full and satisfied for longer.
My version is similar to traditional french toast except I add in protein powder and top it with a cream cheese protein glaze and caramelized bananas.

Protein French Toast with Caramelized Bananas and Cream Cheese Glaze
Ingredients
For the French Toast
- 4 slices whole grain bread
- 2 eggs
- 1/4 cup almond milk unsweetened
- 1/4 cup whey protein powder vanilla
- 1/2 tsp, each cinnamon and ginger
- 1/2 tbsp coconut oil or butter
For the caramelized banana
- 1 medium banana sliced
- 1/2 tbsp coconut oil or butter
- 1/4 tsp cinnamon
For the cream cheese glaze
- 2 tbsp light cream cheese
- 1 tbsp almond milk unsweetened
- 1 tbsp whey protein powder vanilla
Instructions
For the french toast
- Heat oil or butter in a pan over medium-high
- Mix milk, eggs, protein powder, cinnamon and ginger in a shallow dish
- Dunk slices of bread, one side then the other in the liquid mixture, making sure not to soak too much
- Fry bread in a pan until nicely browned on each side
For caramelized banana
- Add more oil to the pan and saute sliced banana until golden but not too mushy and remove from heat
For cream cheese glaze
- Mix all ingredients in a small bowl until smooth
- Top french toast with bananas and glaze and serve immediately or pack into meal prep boxes
