



There’s something about mini versions of classic dishes like meatloaf that makes them more appealing, especially when you are trying to eat healthy.
These healthy mini meatloaves are made with ground turkey and lean ground beef for a leaner, but still flavourful version of traditional meatloaf.
The best part about this meal prep is that all of the components – the meatloaves, the sweet potatoes, and the green beans – can all be placed in the oven at the same temperature.

You can pair these mini meatloaves with any sides, depending on your diet. Try eating them with salad, pasta, rice, mashed potatoes, Lighter Potato Salad, Instant Pot Broccoli with Garlic Sauce, or this delicious asparagus salad, or really anything you like.
I decided to make these mini meatloaves with green beans and roasted sweet potatoes. Being a person who loves to streamline the meal prep process, I wanted to be able to put my meatloaf and sides in the oven at the same time, at the same temperature.
After tinkering around a bit, I figured out a way to do this!

Seasoning Your Mini Meatloaf
Mini meatloaf can be seasoned in a large variety of ways! I have a master list of seasoning mixes in this post (or see below).
For this meal prep, I used Italian style seasonings and topped them with a simple marinara sauce. You can make your own or use your favourite store bought sauce.
Another very popular option is to use BBQ sauce. Check out this delicious recipe for Maple Bourbon BBQ sauce for homemade, or again, use your favourite brand.

Preparing Mini Meatloaf
Really, these meatloaves are super simple to make. Just mix your ground meat, seasonings and other ingredients in a bowl, use your hands or a big spoon to mix, and scoop them into a muffin tray.
I often use silicone muffin tin liners, which I absolutely love, but you can also just grease the cups a bit.
Tip: I also use these silicone liners to section food in my kids’ lunchboxes!
Mini Meatloaf Ingredients
Mix ground beef and ground turkey in whatever proportion you desire. You can use all one or the other if you wish as well. I used one pound (454g) of each beef and turkey. The more turkey you use, the more lean these meatloaves will be.
Add one cup of panko bread crumbs and 2 whole eggs, if desired. You can leave these ingredients out for a lower carb or gluten free option (alternatively, use gluten free bread crumbs)

After mixing, scoop the meatloaf mixture into your muffin tin, top with desired sauce and some shredded cheese.
For an instant marinara sauce, like I used here, just combine a cup of tomato sauce, some Italian seasonings (about 2 tbsp) and salt and pepper to taste.
Smokey cheddar cheese is highly recommended as you don’t need much to make a huge flavour impact!

Set your oven to 400 degrees F while you prepare your veggies!
Roasted Sweet Potatoes and Green Beans (sheet pan recipe)
For the veggies, all you need to do is toss them with some oil, salt and pepper (or any additional seasonings you desire).
In order for the sweet potatoes to roast through, cut them into coins. If you don’t mind leaving them in the oven for longer than the rest of your meal prep, feel free to make wedges or fries as well.

Spread your veggies on a sheet pan and roast them along with the meatloaves. Place both oven racks in the center most part of your oven as you can. I have a convection oven, so it is not vital that I rotate or alternate racks, but if your oven cooks unevenly, you may want to switch positions and turn the pans half way through cooking.
Roast everything for 20-25 minutes.


Putting Together Your Meal Prep
Add two or three mini meatloaves to each of your favourite meal prep containers, along with a helping of sweet potatoes and green beans.
Pack these up and reheat in the the microwave for a couple of minutes and you’re set!
Kids love these too and one is enough for my kiddos. I sometimes send their meatloaf meal prep with some salad and some pasta or rice.
Serve with hot sauce if desired.

Mini Meatloaf Meal Prep
Ingredients
For the Meatloaves:
- 1 lb. lean ground beef
- 1 lb. extra lean ground turkey
- 1 cup finely chopped or grated onion
- 2 eggs
- ½ cup panko breadcrumbs optional
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 Tbsp Worcestershire sauce
- 1 tsp oregano
- 2 tsp garlic powder
- 1 cup marinara sauce or bbq sauce
- 1 cup shredded cheese (smoked is fantastic!) optional
For the Sweet Potatoes:
- 2 large sweet potatoes cut into coins
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 Tbsp oil
For the Green Beans:
- 1 lb green beans washed and trimmed if necessary
- 1/2 Tbsp oil
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
For the Meatloaves:
- Preheat oven to 400 degrees F.
- Spray a standard 12-cup muffin pan with cooking spray or line with silicone muffin cups and set aside.
- Place meat in a large bowl. Add onion, eggs, panko, salt, pepper.
- Use your hands to gently combine. Do not over mix!
- Press the ingredients into the prepared muffin cups.
- Top each mini meatloaf with a dollop of marinara sauce, store-bought or homemade BBQ sauce and shredded cheese, if using.
For the Sweet Potatoes:
- Line a baking sheet with foil and grease with oil or spray with cooking spray
- Toss sweet potatoes in oil, salt and pepper. Add other seasonings if desired.
- Spread in one layer on tray, leaving room for green beans
For Green Beans:
- Toss in oil and seasonings and spread in single layer on prepared baking sheet
- Bake for 20-25 minutes, or until meatloaves are cooked through and a thermometer registers 160 degrees F.
- Check veggies for doneness. Place back in oven for 5-10 minutes if you would like your sweet potatoes to crisp up a bit more.
