


Healthy microwave brownie hot chocolate protein cake in a mug.
This is a molten lava cake that’s vegan, gluten free, and sooo fudgy and delicious.
Add natural sweetener, protein powder and use your flour of choice. Use almond flour for low carb. Easy and healthy made with banana and other pantry ingredients.
This healthy dessert (or breakfast shhh!) is high in calcium, iron, and potassium. It’s a little over 200 calories for the whole hot chocolate mug cake and has 15 grams of protein to keep you full through the morning or perk you up for an afternoon snack. Oh and it has a whopping 21% of your daily fiber!



First thing’s first! You’ll need a good sized mug.
Add half of a banana and smush it up good. I just mash it against the side of the mug with a fork.




Add 2 tablespoons of flour of choice to make your protein cake in a mug.
This is homemade oat flour, but you can use any type. All-purpose, gluten-free blend, or even almond flour for low carb mug cake.
Add 3 tablespoons of almond milk, coconut milk, or any type of milk you like.
You can add protein powder of any kind. Whey, vegan, casein, etc. It is a protein mug cake after all! But you can also skip this if it’s not your thing.

Next, add any sweetener if you need it. Flavoured sweetned protein powder may not need any extra sweetness, especially with the banana. It will also depend on how ripe and sweet your banana is, so play around with it!
Add 1/2 teaspoon of baking powder, 1/2 teaspoon of cinnamon, 1 tsp melted coconut oil or oil of choice, and a pinch of salt.
Now pop that bad boy (bad girl? person?) in the microwave and set it for 1 minute. Maybe 2 minutes if your microwave is old and craptastic like mine.
The mug cake should be shiny and a bit wet looking. If you let it ride until the protein cake in a mug is dry, than it will just be cake, not fudgy gooey, hot chocolate molten lava cake like I promise in the title. And that will be on you. Don’t say I didn’t warn you!

I’m telling you right now, make your inner fat kid sing and add some vanilla ice cream or frozen yogurt! You’re welcome!
Other toppings that take this protein cake in a mug over the top are crushed roasted peanuts, a drizzle of almond butter, melted chocolate, or some fresh banana or strawberry slices.
The mug is your oyster (don’t actually add oysters though… that would be gross).

Ingredients
- 1/2 banana
- 2 tbsp oat flour or flour of choice
- 1 tbsp monk fruit sweetener or sweetener of choice
- 1.5 tbsp cocoa powder
- 2 tbsp protein powder, unflavoured (*see note)
- 3 tbsp almond or coconut milk or milk of choice
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp melted coconut oil or oil of choice
- pinch of sea salt
Instructions
- In a large mug, mash the banana.
- Add remaining ingredients and whisk together with a fork until well combined.
- Microwave for 1 to 2 minutes. Microwaves vary. The edges set and the center is very moist and shiny, not fully cooked.
- Overbaking will result in a dry cake.

Easy and delicious!
I haven’t tried this out for breakfast yet but I can definitely say that as a quick and easy dessert, this is great! Dump everything into a mug, give it a stir and it comes out all gooey and chocolatey just as promised. Really need to experiment with toppings now!
