In this energy smoothie recipe, I’ve roasted the beet. I love the natural sweetness and depth of flavour this provides. You can also steam or boil your beets, keeping in mind that if you choose to boil them, you will lose some nutrients in the cooking water.

Red Velvet Cheesecake Energy Smoothie
For this smoothie you will need:
- 1 roasted beet
- 1 1/2 cups almond milk
- 5 pitted dates soaked if necessary
- 1/2 cup cottage cheese or ricotta cheese, or silken tofu for vegan
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp almond extract
To roast beets, set oven to 425 degrees F. Prick beets with a fork and wrap them in aluminium foil. Roast for 45 minutes. Let the beet cool for 20 minutes and peel.
Blend all of the ingredients together in a Nutribullet, blender, or food processor.
To make the topping, combine:
- 2 tbsp light cream cheese, or silken tofu for vegan
- 4 tbsp almond milk
- 1/2 tsp maple syrup or stevia drops

Ingredients
- 1 roasted beet
- 1.5 cups almond milk
- 5 pitted dates soaked if necessary

- 2 tbsp light cream cheese, or silken tofu for topping, if desired
- 4 tbsp almond milk for topping, if desired
- 1/2 tsp maple syrup or stevia drops, for topping, if desired
- 2 tbsp cacao nibs for topping, if desired
Instructions
- Place all ingredients in a blender and blend until smooth.
- Top with mixture of cream cheese (or tofu), almond milk, and sweetener, if desired.
