How to Make Healthy Orange Banana Bread with Glaze

You’ll need:

  • 1 3/4 cups whole wheat pastry flour or gluten-free if necessary
  • 3/4 cups monk fruit sweetener or granulated sweetener of choice
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs, use flax egg or vegan egg if desired
  • 1/2 cup melted coconut oil or vegetable oil
  • 1/2 cup almond milk or milk of choice
  • 1/4 cup fresh orange juice
  • 2 overripe bananas mashed
  • 2 tsp orange zest

Method for making healthy orange banana bread:

  • Preheat oven to 350° and line a bread pan with parchment, or grease thoroughly.

Whisk together eggs, melted coconut oil, almond milk, orange juice, mashed bananas, and orange zest.

A trick for squeezing the orange without having any seeds in your batter is to use a small, fine-mesh strainer that can balance on the rim of your mixing bowl.

Add to dry ingredients. Stir together gently until just combined.

Tip batter into a greased or parchment paper-lined bread pan. Bake at 350° for about 60 minutes, or until a fork or skewer comes out clean.

To make the glaze combine:

  • 1/4 cup powdered sugar
  • 3 ounces low fat cream cheese or cashew butter for vegan
  • 1/2 tsp vanilla
  • 1/2 tsp orange zest
  • 1 1/2 tsp almond milk

Drizzle over healthy orange banana bread while still warm.

To make these into healthy orange banana bread muffins, bake at 350 for 15 minutes until fork comes out clean.

  • In a small bowl, whisk together glaze ingredients till smooth. Glaze bread while still warm.

Notes

For muffins, bake at 350 for 15 minutes or until a fork comes out clean from the center.
